The plant whose flowers are ultimately responsible for this Honey, The Southern Rata, is perhaps one of the most finicky of honey source plants. It thrives in a remote area of New Zealand that has extremely high rates of rainfall. It also has a tendency to bloom on an erratic and unpredictable schedule.
The Southern Rata may not blossom for several seasons and therefore cannot be relied upon to consistently produce the flowers that ultimately yield this wonderful honey. When tasting for the first time the immediate impressions of Organic Rata Honey need to be tempered. Since this is a monfloral, glucose dominant Honey, Organic Rata has a rather pungent initial aroma when you first open the jar. Organic Rata Honey is high in glucose, so it chrystalizes very quickly. It must be stirred for best flavor as the honey tends to separate rapidly when crystallizing.
On the tongue Organic Rata Honey feels like very creamy crystalline sugar. It has a very complex taste, first seeming rather sharp which then melts into a silken buttercream flavor. Many people compare the overall flavor as similar to honey butter. Personally we think there is a hint of praline along with the buttery flavor. This honey is complex, it comes on rather strong since the initial taste is rather forward. Over time this honey will surprise you with its multiple layers of flavor. In our home Rata is the favorite. This honey requires patience and a willingness to slow down and appreciate the nuances that are inherent in Organic Rata Honey. Your patience will be rewarded! If you are looking for adventure, then Rata Honey is perfect.
